Another critical component to maintaining the best culinary arts school is a small class size, ensuring plenty of personalized attention.  In both the professional cooking and baking programs at the New School of Cooking, classes never exceed twelve students, meaning that the instructor and teacher’s assistant are available to give each student individual help with techniques and tools.  Recreational classes are limited to sixteen students, with a chef instructor and two assistant instructors.
